Pepper Beef Tenderloin Ingredients:

· 1 pound of beef tenderloin

· ½ tablespoon of fresh minced rosemary

· 1 teaspoon of salt

· 1 tablespoon ground black pepper

· 1 teaspoon orange zest

· 2 tablespoons olive oil

The trick to this recipe is to preparing the onions and sauce just right. Bring the water to a boil and boil the onions for a few minutes, then drop them into cold water. Then, take a skillet and heat up the olive oil and throw the shallots in for a couple minutes. Before you throw the beef on the grill, take the olive oil and rub the beef down.

2 slices pound cake
1/4 cup plus 2 tablespoons hot fudge sauce
2 tablespoons Amaretto
8 strawberries, sliced

2 tablespoons hot fudge sauce, melted
toasted slivered almonds
vanilla ice cream

In a microwave-safe bowl, combine the 1/4 cup plus 2 tablespoons hot fudge sauce and Amaretto. Microwave on high for 30 seconds. Put half of the sauce on one dessert plate and half on another. Put the cake slices in the fudge sauce. Put the strawberries in even layers on top of the cake. Microwave each cake square on high for 30 seconds. Top with the 2 tablespoons hot fudge sauce, slivered almonds and ice cream.

Chocolate Strawberry Ice Cream Dessert

A delightful treat for your valentine with Oreos, chocolate and strawberries. A perfect chilled dessert to help steam up your romance.

50 Oreo’s, crushed
4 tablespoons butter, softened
1 package (8 ounces) cream cheese, softened
1 cup chocolate syrup
1 package (8 ounces) whipped topping, thawed
1/2 gallon strawberry ice cream, thawed slightly
1 pint strawberries, sliced
chocolate syrup

In a small bowl, mix the crushed Oreo’s and butter. Put 1/3 of this mixture into a 9 x 13-inch pan. Beat the cream cheese with an electric mixer until smooth. Add the chocolate syrup gradually to the cream cheese. Fold the whipped topping into the chocolate mixture. Put the chocolate mixture on top of the crumbs and then add another 1/3 of the crumb mixture over this layer. Slice the strawberry ice cream into 1 inch thick slices and put over the chocolate layer. Top this layer with the remaining crumbs. Freeze at least overnight. Allow the dessert to sit out for about 15 minutes before cutting it into bars. Put the sliced strawberries on top of a bar and drizzle with chocolate syrup.

Great Recipes For Your Cinco de Mayo Party - Cheddar Chipotle Dip, Mole Poblano, Golden Margarita

In Mexico, Cinco de Mayo (May 5th) is primarily a regional holiday celebrated in the state of Puebla. It has major significance in that part of the country because it commemorates an initial victory of Mexican forces led by General Ignacio Zaragoza Seguín over French forces in the Battle of Puebla on May 6, 1862.

There is a common misconception that Cinco de Mayo is Mexico’s Independence Day when in fact September 16th is the most important national patriotic holiday in Mexico. In the early hours of September 16, 1810, father Hidalgo, accompanied by several conspirators (Iganacio Allende, Doña Josefa Ortiz de Domínguez to name a few), rang the bell at his church calling on everyone to fight for liberty. This was the beginning of the Mexican Independence War, which lasted 10 years.

In the United States, Cinco de Mayo has taken on meaning beyond that in Puebla, Mexico. Regardless of their own ethnic descent, Americans celebrate St. Patrick’s Day and Oktoberfest (among other holidays) to honor those of Irish and German descent. Similiarly, Cinco de Mayo is celebrated to honor the culture and experience of those of Mexican descent.

Especially in cities with large populations of those of Mexican ancestry, such as Los Angeles, San Fransico and San Antonio, Cinco de Mayo is grandly celebrated. This is the perfect occasion for planning a home theme party so I thought I would help you get started by sharing a few of my favorite Cinco de Mayo recipes.

Appetizer–Warm Chipotle Cheddar Dip

2 cups shredded Cheddar cheese
1 cup shredded Monterey Jack or Mozzarella cheese
1/2 cup mayonnaise
1-8 oz. can whole kernel corn, drained (3/4 cup)
1-4 oz. can chopped green chili peppers, drained
2 teaspoons finely chopped canned chipotle chili peppers in adobo sauce (or to taste)
1/4 teaspoon garlic powder
1 medium tomato, seeded and chopped (3/4 cup)
1/4 cup sliced green onion
2 tablespoons snipped fresh cilantro
Vegetables, crackers or chips

I found this dip when I was on a low carb diet and was looking for a party appetizer that would work well with vegetables. Something with a robust flavor that would perk up the veggies.

Well this one definitely fit the bill. This appetizer has become a favorite among my friends. It’s served multiple times throughout the year at various parties that I either host or attend.

You can make it as smokey and spicy as you want by adjusting the amount of chipotle peppers (smoked jalapenos) but watch out. You can easily go from mildly spicy to blow-your-face-off hot by adding too much!

Steps to Make Warm Cheddar Chipotle Dip

Preheat oven to 350 degrees.

Stir together cheeses, mayonnaise, corn, green chili peppers, chipotle chili peppers and garlic powder in a large mixing bowl. Spread mixture into a 1 quart, covered dish.

Bake for 30 minutes until bubbly. Top with tomato, green onion and cilantro. I like to make a pattern out of the toppings so I put the tomatoes all in the middle, make a ring around them with the green onion then sprinkle the cilantro over all.

Serve with vegetables, like red, green and yellow peppers. Tostido and Frito Scoops work well too.

Main Course–Chicken with Chocolate Sauce (Mole Poblano)

4 tablespoons olive oil
2 cloves garlic, minced
6 chicken breast halves, skinless and boneless
1 onion, chopped
1 green pepper, chopped
3 slices canned pimento, chopped
2 tomatoes, peeled, seeded and chopped
2 tablespoons chili powder (or to taste)
2-1/2 cups chicken broth
1/4 cup slivered almonds
1/4 cup raisins
1/2 teaspoon cumin
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon sugar
Grated rind of 1 orange
2 squares bitter chocolate, chopped
1/4 cup light rum (optional)

Preheat oven to 350 degrees.

In a casserole, heat oil and cook garlic for a few minutes to flavor the oil. Add chicken just to brown (it will finish cooking in the oven) and then remove it from the pan.

In the remaining fat, cook onion, green pepper, pimento and tomato over gentle heat for 10 minutes. Add chili powder, blending well.

Add broth, almonds, raisins, seasonings and rind. Simmer, covered, for 30 minutes then add the chocolate and stir until melted.

Add chicken back in and spoon sauce on top.

Cover and bake for 1 hour or until chicken is tender. Warm rum, ignite it and pour over contents of casserole. Allow to stand for a few minutes until flame is extinguished and then serve on a large platter.

Serves 6.

Cocktail–Golden Margarita, Vero Beach Style

1-1/2 oz. Gold Tequila
1/2 oz. lime juice
3 oz sour mix
1/2 oz. Grand Marnier (can use Cointreau or Triple Sec)
Dash of orange juice
Lime wedge for garnish
Salt for rimming glass (optional)
Several years ago, my husband and I were sitting at a cute little beachfront bar in Vero Beach, Florida. The bartender asked us for our order and I wanted to try something new. He told us that he makes a “mean margarita.”

I told him that my experience with margaritas up to that point was not very good. Every time I tried one, they were either so tart that my face would pucker up or the sour mix was so acidy that it burned going down.

He claimed that his “Golden Margarita” would be different. He was right and I have loved them ever since.

To make a Golden Margarita, Vero Beach style:

Dip the rim of a margarita glass in water then salt.

In a shaker, combine tequila, lime juice and sour mix with ice cubes. Shake well. Pour contents, with ice, into the glass.

Gently pour the Grand Marnier and then the orange juice on top of the tequila mixture. Garnish with the lime wedge.

When you take a sip of this drink, first you get the sweet taste of the orange liqueur and juice then you get the tartness of the lime and sour mix. The combination makes a perfectly smooth Margarita.

Camping Recipes

We have been camping for many years and have found a lot of recipes that we like. Most of them are very easy and even kids can make them.
Everyone loves to congregate around the campfire in the evening to talk about what they seen and did that day and to plan their next day. The great thing about this is that the cook is right there with everyone so they are included in all of the conversations.
I don’t know why it is but campfire smoke gives a wonderful flavor to the food you cook. One of our favorite foods cooked on the open fire are potatoes and onions. I found a great recipe for them that take hardly any work at all. I will give you two of my families favorite camping recipes.

Grilled Banana And Peanut Butter Sandwiches

Peanut butter (I like chunky)
Bread
Butter
Banana
Spread peanut butter on one piece of bread and put a few slices of banana on top. Put another slice on top to make a sandwich. Butter the outsides of the bread and cook in a skillet till golden brown. Flip the sandwich and do the same to the other side.
My kids and grandkids love these peanut butter sandwiches.
Of course, if your kids don’t like bananas you can always leave them out. Maybe you could put jam or jelly in the sandwich instead of the bananas.

Either way they are very good and kids love to make them. When you grill them it just seems to give them a different taste.

Campfire Birds Nest

Eggs

Bacon
Salt and pepper
Cook the bacon over the fire. When it is crisp, transfer to paper towels to drain. Be sure to use at least 2 layers of towels. Pour out the bacon grease from the skillet. Tear the center out of the bread. Put the bread in the skillet and toast one side. Turn the bread and crack an egg into the center of the bread. Add salt and pepper. Cook until the egg is firm and transfer to a plate. Top with the crumpled bacon. You can add a piece of cheese on top if you like cheese.
Kids love to make the breakfast for everyone. It makes them feel like they have contributed to the camping trip.

Webkinz Holiday Recipes

Do you plan on doing something special for your Webkinz this holiday season? I did. I got my kids to sit around the computer with me one morning and told them that their Webkinz were going to have a big Christmas Eve Party.

Next I got a Christmas tree and gathered all of their Webkinz together into one room with plans of making them some holiday food. But to my surprise there really aren’t any Christmas/Hanukkah/Kwanzaa Webkinz Recipes. I was surprised because on Halloween, I treated my Webkinz to Halloweenog. I think for Christmas, I’m going to have to improvise.

Maybe I could start with something like Hot Cocoa. That’s a festive holiday drink. But since I was set on making Webkinz Recipes maybe there was a Cocoa like recipe that I could try. I took a quick look at a list of recipes that I’ve been meaning to try and saw Hot Marshmallow. It’s made with Marshmallows, Milk and a Chocolate Bar in the blender. Sounds like fancy hot cocoa to me. We went to the W. Shop and bought 5 Marshmallows, 5 Milks and 5 Chocolate Bars so we could make Hot Marshmallow for each Webkinz.

After my daughter clicked the blend button we saw that Hot Marshmallow looked more like a big meatloaf than a festive holiday drink. But everyone was happy when we fed it to the Webkinz and they said it was Mmmmm to to max!

Dead set on serving hot chocolaty drink, I tried again. Ah-ha, I found a recipe for Trippple Hot Chocolate. With three P’s it’s got to be good. So we loaded the blender with Chocolate Milk, Hot Cocoa and a Chocolate Bar. Yes, Trippple Hot Chocolate was perfect.

Now that the Webkinz had a hot drink, it was time for a hot meal. Zazzeloop Soup is pretty festive looking with it’s little Christmas trees on top so we ran out to the W. Shop again to buy some Pizza, Lollipops and Tomato Soup. Zazzeloop Soup is a stove/grill/cauldron recipe but we decided to use the stove.

Voila, Zazzeloop Soup! Now we were on a roll. Most of the Webkinz’ Hunger Meters were way up in the 90s. I think I even saw a few of them loosen their belts. Well, not really but I told the kids that anyway.

After watching a little Chef Gazpacho on the flat screen we decided the party was over. We had a real holiday get together with the kids’ Grandma in a few hours so it was time to start getting ready. We walked each of the Webkinz back to their rooms and put them to bed. Our little holiday party made the Webkinz Happy, Healthy and maxed out their Hunger Meters. And I think that if my kids had Happy Meters, they would have been maxed out too.

Bulgarian Food Recipes

Bulgarian food is very tasty indeed, maybe because it has so many influences from the Arabic, Turkish, Greek and Western European cuisines.

Soups are very popular in Bulgaria; there’s no lunch without soup. In summer, the most popular is a cold soup called ‘tarator’, prepared from yoghurt, water, cucumber, garlic, dill, nuts and a pinch of salt. Tourists also find it very refreshing.

For the rest of the year, there are:
1) ‘zeleva chorba’ (a kind of cabbage soup with fat meat, rice and pepper and a rather sour taste which makes it unpopular with foreigners); ‘agneshka kurban chorba’ (of Turkish origin, boiled mutton soup);

2) ’shkembe’ (the most popular soup in the country, consisting of tripe, milk, water and spices; it is very a very good medicine for hangovers and must be consumed with chilly red pepper, garlic and vinegar).

Main courses bear the same weird names and are even tastier than the soups.

‘Sarmi lozovlist’ and ‘zelevi sarmi’ both consist of a mixture of minced meat and rice rolled in leaves - grape wine leaves for the former and sauerkraut leaves for the latter. They are sometimes cooked without meat!

Brought to Bulgaria centuries ago, ‘musaka’ is a dish of Greek origin. It is usually cooked from potatoes and minced meat but sometimes eggplants are used as a substitute for potatoes. There is also a vegetarian option available.

‘Kavarma’ is an aromatic combination of meat (beef, pork or lamb), chicken or fish, mushrooms, onion, tomatoes, carrots, pepper etc. It is served very hot in a clay pot.

‘Giuveche’, also cooked and served in a hot pot, contains meat or sausages, vegetables, cheese and eggs. You should not order it if you are too hungry as it takes a long time to cook.

The traditional Bulgarian salad is made of tomatoes, fresh cucumbers and cheese, sometimes also onion, peppers, olives and parsley. It is very tasty as the Bulgarian vegetables are grown naturally, without fertilizers which makes them a lot juicier than they are in western countries.

A very pleasant culinary adventure is a Bulgarian appetizer made of cheese, honey and basil. It may sound strange but its taste is amazing. Usually a bit of garlic is added for those who like it. ‘Kiufte’ is a traditional meatball prepared from minced meat with local spices. In Bulgaria it is consumed as a main course with salad, chips, pickles or other garnish. It is prepared in a frying pan but it may also be cooked with sauce as stew or as a soup with pasta or potatoes.

Among desserts, the most popular in the area are: ‘halva’ (milled cereals or seeds, oils and nuts), ‘lokum’ (a soft sticky sweet rolled in sugar), ‘baklava’ (a very sweet pastry with syrup and walnut filling, of Turkish or Arabian origin).

There is a choice of western European food in most restaurants of the capital city but a tourist to Bulgarien had better try the local cuisine. The food is too tasty to miss; besides, most of the courses are not difficult to prepare at home and if you find something exceedingly tasty you might ask for the recipe and try cooking it when you get home.
